Zelda: Tears of the Kingdom is huge. With a mount, it's way easier to explore the vast map and fortunately there are enough of them to choose from.
Whether across lush green meadows of the vast plains, up rocky, narrow mountain paths or through endless deserts, your explorations in Zelda: Tears of the Kingdom will take you through the most diverse areas. Of course, you'll be able to explore everything on foot, use the paraglider or build yourself a new vehicle. But you can just as well rely on a mount in the classic way.
Fortunately, there is a suitably large selection of different mounts. Thankfully, the process of taming your mounts applies to all of them.

Let's start with the obvious one. While exploring the planes, you'll stumble across wild horses, grazing and minding their own business. They all have different stats and bonding levels, and if you want to bring back your beloved horses from BotW, you can transfer them. Furthermore, there are five special horses and also other animals.

In the Hebra region, you can find the Golden Horse. After completing the first temple, travel to Tabantha Tundra. You'll probably spot the golden, shimmering steed as soon as you arrive. Proceed the same as you do with regular wild horses. But be careful! There is a world boss close to it.

For Spot you'll have to complete a side quest named Spotting Spot. By talking to the NPC repairing the stable in Lookout Landing, you'll start the quest and find his dalmatian colored horse a little bit to the south. Once you've returned Spot to his owner, he lets you keep him.
If you want to travel long – and I mean long – distance, you should probably try to get the Giant White Stallion. This tanky beast can't run out of stamina. But this also means it will take you quite a lot of stamina to tame it. You can find the stallion near the Lake of the Horse God and from there on travel anywhere atop of it without the steed ever getting tired.
Far to the southeast, between Hateno Village and Deepback Bays, you will find Ganon's Horse, grazing with a few other (much smaller) horses. Its stats are pretty much the same as the one of the Giant White Stallion, but this one has a gloomier color scheme.
Of course, you want to have the iconic Epona to accompany you. She has been around for decades now and just belongs to Link. If you have a save file of BotW or the game installed, you can get her at the first stable you'll stumble across. Otherwise, you can use an Amiibo to unlock her.

So this is something like a bonus: Near the Sanidin Ruins you'll hear a rumor from an NPC, talk about spectral mounts that only come out at night. If you follow the rumor and take a look around at night, you'll probably find a Stalhorse. Unlike the other mounts before, you can't register it at a stable, so it will be unfortunately gone if you dismount it.
Other Mounts
You've most likely already had an encounter with this mount – but chose to run away. Nearly everywhere you'll come across a bear. Yep, that's right. You can mount a bear and ride with it across Hyrule. Like the Stalhorse, you can't register them at a stable, but mounting them works the same as with every horse.
Along mountain passes in Lanayru or the Hyrule Field, with a little bit of luck, you can spot a Mountain Buck. These are rare, very timid, and they will outrun you with ease. So you'll have to be real stealthy to mount one of them, and unfortunately you also can't register them.
